Hello veggie vixens & raw food lovers! Remember my previous post where I announced I'd be away for two weeks taking a yoga course? Well it's been 3 months and I'm still here!! Hence it's been a long time since I've posted a raw vegan sattvic recipe. Here's a quick & easy recipe that one of the yoga teachers here makes.
Raw Vegan Sattvic Carrot Salad
- Carrots, peeled & grated
- Coconut, freshly grated (you can use unsweetened shredded coconut, but fresh is tastier)
- Raisins (or fresh dates, chopped)
I've recently discovered a source of fresh sprouts (sunflower, peas and wheatgrass), which I'm blending into a super duper green smoothie every afternoon. Will post recipes and photos soon.
